A local classic, this one-dish meal combines Chinese, Malay and Indian spices to produce a full-bodied coconut curry noodle dish.

What you need...
1 sachet Asian Home Gourmet SpicePaste (INSIDE)
1 pack Asian home Gourmet Noodles (INSIDE)
1 pack Asian Home Gourmet Coconut Cream Powder (INSIDE)
150g (½lb) sliced chicken or seafood
2 cups (440ml) water - to make coconut milk
2-3 tbsp vegetable oil
Bean sprouts or hard cooked egg (quartered) as garnish

What to do...
1. Bring 4 cups (1 litre) of water to a boil. Turn off heat. Add noodles, cover and soak for 5 minutes. (DO NOT BOIL THE NOODLES!). Rinse in cold water. Drain. Portion the noodles into 2 soup bowl. Set aside.
2. Mix coconut cream powder with 2 cups (440ml) water. Set aside.
3. Heat oil in non-stick saucepan on medium-high heat. Add Spice Paste, chicken or seafood and stir-fry for 2 minutes. Stir in coconut milk. simmer for 3 minutes or until cooked. Pour over noodles. Garnish and serve hot.
Ingredients:Noodles (120g): Rice Flour, Water.
Spice Paste (50g): Galangal, Shallot, Soyabean Oil, Sugar, Salt, Garlic, Red Chilli, Shrimp Paste (Shrimp, Salt), Lemongrass, Turmeric.
Coconut Cream Powder (40g): Natural Coconut Cream (Coconut, Water) (85%), Glucose Syrup, Mono & Diglycerides of Fatty Acids, Dipotassium Phosphate, Anti-Caking Agent: Silicon Dioxide.
