Pad Thai Noodles Kit (炒金邊粉)

Pad Thai is Thailand's most famous noodle dish. It has a subtle balance of flavours with pickled turnip, crushed peanuts, fresh chives and a dash of lime.

What you need...
1 sachet Asian Home Gourmet SpicePaste (INSIDE)
1 pack Asian home Gourmet Noodles (INSIDE)
250g (½lb) thinly sliced boneless chicken breast, firm tofu or seafood (shelled shrimp, calamari or mussels)
50g (½ cup) fresh bean sprouts
2-3 tbsp vegetable oil
2 tbsp crushed peanuts
1 egg, beaten
Lime wedges and chives or scallions as garnish

What to do...
1. Bring 4 cups (1 litre) of water to a boil. Turn off heat. Add noodles, cover and soak for 5 minutes. (DO NOT BOIL THE NOODLES!). Rinse in cold water. Drain and set aside.
2. Heat oil in a non-stick wok on medium-high heat. Add chicken, tofu or seafood and stir-fry for 1 minute. Add egg and stir-fry for 1 minute. Push the mixture to the side of wok.
3. Add noodles and SpicePaste and stir-fry for 3 minutes. Add bean sprouts and stir-fry for 1 minute. Add peanuts and mix well. Garnish and serve hot.
Ingredients:Noodles (120g): Rice Flour, Water.
Spice Paste (50g): Sugar, Soyabean Oil, Fish Sauce (Anchovy-Fish Extract, Salt), Garlic, Pickled Turnip, Paprika, Tamarind, Salt, Spirit Vinegar, Citric Acid (Acidifier).
