Description:Coconut Milk Powder

Yellow Rice Mixed with Garlic and Coconut
Serving 3-4
Ingredients:
600g rice (cleaned & washed)
120g onions (chopped)
50g garlic (chopped)
1 sprig curry leaves
1/2 inch piece cinnamon
3 cardamoms
2 cloves
20 peppercorns
1 1/2 teaspoons salt
1/2 teaspoon turmeric powder
6 tablespoons coconut milk powder dissolved in 1 litre warm water
3 tablespoons coconut oil or margarine

Method:
- Heat oil/margarine. Add curry leaves, chopped onions, garlic, cinnamon, cardamoms, cloves and pepper corns and fry until golden brown.
- Add the rice and continue frying for a few more seconds. Add turmeric only to get a very light colour.
- Add the coconut milk and salt and cook until the rice becomes fluffy and grainy (the rice may also be garnished by sprinkling 50-75g of fried cashew nuts).

Once opened store in a dry place. Use a dry spoon.
