Spare Rib Sauce (淘大排骨醬)

Description:Braised Spare Ribs (Serves 4)
Chop 450g/1lb pork spare ribs into bite-size pieces, marinade with 1 tsp sugar, 1 tbsp Amoy Light Soy Sauce, 1 tbsp dry sherry, 1 tbsp corn flour for 30 minutes. Lightly brown in 2 tbsp oil and add 1 tsp chopped garlic, red or green chillies, spring onion and 3 tbsp Amoy Spare Rib Sauce, with about 200ml stock of water. Braise for 12-15 minutes, stirring constantly. Add 1 medium cubed green pepper, continue cooking for 2 more minutes. Serve hot. Ensure fully cooked before serving.
