Description:Cinnamon Sticks (Cassia)

This delightfully exotic, sweet yet spicy flavoured spice comes from the outer brown bark of cinnamomum cassia tree, which when dried, rolls into a tubular form known as quill. Due its flavour cinnamon is diversely used in cooking and features in both sweet and savoury cuisine around the world.

Braised Cinnamon Anise Sweet Potatoes Recipe:
Ingredients: 1 tsp vegetable oil, 3/4 cup green onion (sliced), 2 tbsps sugar, 1 tsp chilli paste, 6 garlic cloves (thinly sliced), Sliced peeled fresh ginger (crushed), 2 cinnamon sticks (3"), 1 star anise (crushed), 4 cups of water, 13 cups low sodium soya sauce, 1 tbsp white vinegar, 2 lbs sweet potatoes (peeled and cut into 2 12" pieces), 2 tbsps onions (minced).

Heat oil in a large oven over medium/high heat. Add 3/4 cup onions and sugar, chilli paste, garlic cloves, crushed ginger, cinnamon sticks and star anise to oil and stir fry for 15 seconds. Add water, soya sauce, vinegar and bring to boil.
Add potatoes, reduce the heat and simmer for 25 minutes (or until tender). Turn off heat and leave to cool slightly before removing potatoes from the liquid with a slotted spoon. Sprinkle with 2tbsp of onions and serve.

Once opened we recommend transfer of product to an airtight container.
Store in a cool dry place away from strong flavours
