Recipe For Exotic Salmon Omelette
Ingredients:
1 tbsp vegetable oil, 1/2 peeled and grated onion, 1 tsp black mustard seeds, 5 curry leaves, 2 chopped tomatoes, 1 tsp garlic paste, 1 tsp ginger paste, 1 finely chopped birds eye chilli, 1 tsp garam masala, 6 eggs, 100g coconut cream, 1 tsp turmeric, 1 tbsp double cream, 200g cooked salmon
Methods:
Set oven at 180C/350F/Gas 4. In an oven-proof frying pan, heat the mustard seeds over medium heat until they begin to pop (keep face away from popping mustard). Add vegetable oil, onion, curry leaves and fry for 5 minutes. Add tomatoes, ginger, garlic, chilli, garam masala and mix well. Cook for 3 minutes. Add coconut cream and flaked pieces of salmon. In a bowl, beat the eggs, double cream and turmeric until well-combined, then mix into the frying pan. Cook for 3 minutes, then transfer to the oven and bake until the egg is cooked through.

Once opened, transfer the product to an air-tight container.
