Delicious Dal Fry
Ingredients:
1 cup of toor dal
1 onion, cut into long strips
1 green chilli, finely chopped
200g KTC Chopped Tomatoes
½ tsp mustard seeds
½ tsp cumin seeds
½ tsp coriander seeds
½ tsp KTC Ground Turmeric
1 tsp KTC Chilli Powder
1 tsp grated ginger
2 tbsp KTC Vegetable Oil
2 tsp fresh coriander, finely chopped
Salt to taste

Method:
Wash dal thoroughly in at least two changes of water, add 2 cups of water and pressure cook until done. Heat the oil in a saucepan, then add all of the seeds and fry until they start to pop. Immediately add the onion, tomatoes and ginger and saute until soft. Add the chilli powder and fry for one minute. Add the dal mixture and bring to the boil. Simmer for 5-10 minutes. Remove from heat, transfer to a serving dish and garnish with the fresh coriander. Serve hot with rice, roti or naan.
