Description:Coconut milk is an essential ingredient in the cooking of South East Asia and India. Contrary to popular belief it is not the juice of the coconut, which, whilst a refreshing drink, is not for cooking. Rajah Coconut Milk is made by pressing the meat of the ripe fresh coconut to extract the milk, after the shell, husk and juice have been removed. It imparts a subtle mellow flavour to all curries and other dishes for which coconut milk is required. It is a must for authentic Thai Cooking.

Mild Vegetable Curry (Serves 8):

3tbsp Rajah Mild Curry Paste
300g Carrots, diced
300g potatos, diced
200g spinach, chopped
400ml Rajah Coconut Milk
2 tsp sugar

1. Boil potatoes in plenty of water for 15 minutes and drain.
2. Combine all ingredients in a pot and simmer for 15 minutes, until vegetables are soft.
3. Serve hot with rive and naan bread.
Ingredients:Coconut Kernel Extract(60%), Water, Corn Starch, Stabiliser(Carboy Methyl Cellulose), Carrageenan Guar Gum, Antioxidant(Citric Acid).
