Grilled meat or seafood marinated with lemongrass and fish sauce is a traditional favourite in Vietnam, with everyone squatting on low stools around a charcoal griller to enjoy this appetizer. This dish is usually served with salads and Mung Bean Vermicelli.

Vietnamese Grilled Meat Salad (Goi Bo) (Serves 4)
1 packet Vietnamese Lemongrass Marinade
450g sirloin beef, chicken or lamb steak; cut into strips
1-2 tbsp vegetable oil
2tbsp fresh green lime or lemon juice
3 shllots, thinly sliced
150g cucumber, thinly sliced
1 tbsp fresh chopped coriander or mint leaves as garnish

1. Heat oil in a non-stick pan on medium heat. Add meat; pan-fry until cooked. Transfer the cooked meat in a big bowl.
2. Stir in the Marinade, lime or lemon juice and shallots.
3. Place the marinated mixture over thinly sliced cucumber. Chilli and garnish before serve.

Variations: You may use seafood (squid, prawns or lobster) instead of meat.
Cooking Tips: You may use 2 (450g) whole pieceof meat with thickness of 1 1/2 cm and charcoal or electric grill the meat until cooked. Cut into strips and mix with the Marinade, lime or lemon juice and shallots. Chilli and serve cold with rice vermicelli.
