Description:
1. Prepare about 1kg of fish, removing gills, fins and bowels. Clean thoroughly, then slice into bite-sized chunks. Marinate in shredded ginger and 4 tbsp cooking wine.
2. Heat about 70g vegetable oil in a pot, add one sachet of Seasoning For Fragrant and Spicy Fish and fry until fragrant. Add about 750g chicken stock, fish stock or water and bring to the boil.
3. Cook the marinated fish for 3-5 minutes until cooked. Add celery and shallots if desired, boil for 1 minute then serve piping hot.
