Description:Rajah Ground Ginger is obtained by drying and powdering fresh ginger root.

Recipe Suggestion: Fish Mollee

Ingredients for 4 servings:
3tbsp warm milk, 2 tbsp white wine vinegar, 1 large onion chopped, 1 garlic clove - finely chopped, 2tbsp mustard or sunflower oil, 2 oz creamed coconut, 1 1/2 lb white fish skinned and boned, 2 green chillies chopped, salt, lemon juice, 1/2 tsp ground ginger, 1/2 tsp tumeric, 2 black peppercorns, 1/4 tsp saffron strands.

Method:
Soak spices in warm milk and vinegar for 30 minutes. Fry onion and garlic until brown. Add spices and stir fry creamed coconut with a little water. When hot add fish with chillies and cook until fish is tender approx. 10-15 minutes. To keep sauce fluid add a little water. Add salt to taste. Sprinkle with lemon juice and serve. Ensure fully cooked before serving.
